Break up the chocolate and melt slowly in the milk. Stir in the semolina and bring to boil. Continue to stir and boil for 3 minutes then mix in egg yolk and sugar. Cover, (to prevent skin forming on top) and leave to cool. Beat egg white until stiff then into the semolina mixture together with the vanilla essence. Turn into sundae glasses (martini glasses give a modern look) and decorate with whipped cream, cherries and chopped nuts.
