Soft-centred, chewy, and loaded with chocolate chips, these oat cookies are the kind that disappear from the cooling rack far faster than expected. They’re quick to make, wonderfully comforting, and perfect with a cup of tea or coffee.
- 125g butter
- 1/2 cup brown sugar
- 1/4 cup caster sugar
- 1 egg
- 1 tsp vanilla essence
- 3/4 flour
- 1/2 tsp baking soda
- 1 pinch salt
- 1 cup rolled oats
- 1 cup chocolate chips
Method
Preheat your oven to 160C and line two baking trays with non-stick baking paper.
Place the butter and sugars in a bowl and beat until pale and creamy. Next beat in the egg and vanilla essence.
Sift in the flour, baking soda and salt. Then add the rolled oats and chocolate chips and mix well to combine.
Drop rounded tablespoonfuls onto prepared trays and bake for 12 to 15 minutes.
