Jamaican jerk chicken

Do you ever feel like dinner is boring and you need a massive burst of flavour? Give this recipe a go for your next bbq or family dinner. If you’re not a big fan of heat then half the jalapenos used.

Serves 4

Prep time: 8 hours

Cooking time: 45 minutes

Ingredients:

  • 4 cloves of garlic crushed
  • 1 onion
  • 2 jalapeno peppers, halved
  • Juice of two limes
  • 2 Tbsp soy sauce
  • 3 Tbsp olive oil
  • 1 Tbsp salt
  • 1 Tbsp honey
  • 1 Tbsp dried thyme
  • 1 tsp ground cloves
  • 1 tsp pepper
  • 3/4 tsp ground nutmeg
  • ½ tsp cinnamon
  • 10 chicken drumsticks
 Method:

Combine everything but the chicken in a blender. Blend until the mixture is smooth.

Combine marinade and chicken in a container and keep in the fridge overnight. If you can’t marinade overnight, marinade for as long as possible for the best flavour in the end.

Preheat the oven to 200 C and place chicken pieces in large, shallow baking pans. Bake for 40-45 minutes, or until juices run clear.

Enjoy with beans, rice or bbq salads and a wedge or lime.
