Do you ever feel like dinner is boring and you need a massive burst of flavour? Give this recipe a go for your next bbq or family dinner. If you’re not a big fan of heat, half the amount of jalapenos used.
Serves 4 | Prep time: 8 hours | Cooking time: 45 minutes
- 4 cloves of garlic crushed
- 1 onion
- 2 jalapeno peppers, halved
- Juice of two limes
- 2 Tbsp soy sauce
- 3 Tbsp olive oil
- 1 Tbsp salt
- 1 Tbsp honey
- 1 Tbsp dried thyme
- 1 tsp ground cloves
- 1 tsp pepper
- 3/4 tsp ground nutmeg
- ½ tsp cinnamon
- 10 chicken drumsticks
Method
Combine everything but the chicken in a blender. Blend until the mixture is smooth.
Combine marinade and chicken in a container and keep in the fridge overnight. If you can’t marinade overnight, marinade for as long as possible for the best flavour.
Preheat the oven to 200 C and place chicken pieces in large, shallow baking pans. Bake for 40-45 minutes, or until juices run clear, turning half way through.
Enjoy with beans, rice or bbq salads and a wedge or lime.
