Grain free coconut loaf

A delicious, low carb coconut flour bread, perfect for any occasion. The loaf is grain free, gluten free, and can easily be made dairy free if you substitute the butter for coconut oil in a 1:1 ratio.
Enjoy fresh or toasted with your favourite spreads.
Ingredients: 
  • 3/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 eggs
  • 110g butter melted
  • 4 tbsp. honey or to taste (you can make it a sweeter or more savoury loaf depending on your preference)

Method:

Preheat oven to 180 C and grease a loaf tin.

Sift the first 3 ingredients into a small bowl; set aside. In a medium bowl, whisk together the remaining ingredients well. Add the dry ingredients and whisk until the batter is smooth with no lumps.

Leave to rest for 5 minutes to allow the coconut flour to absorb the liquid then pour into your prepared loaf tin and  for 40 minutes.
