Part two of the Essential Summer Salad Dressings, make at the start of the week throw in the fridge and use to vamp up your meals for the rest of the week.
Ingredients
- 3 tbsp fresh lime or lemon juice;
- 1/2 tsp Dijon mustard, optional;
- 3/4 cup extra-virgin olive oil;
- Sea salt and freshly ground black pepper to taste;
Methods
Combine all the ingredients except the oil. Add the oil slowly while whisking vigorously.
Put in a screw top jar and shake well before using.
Will store in the fridge for up to one week.
Crushed Tomato Vinaigrette
Ingredients
- 1 quantity of the classic lemon vinaigrette;
- 110g cherry tomatoes;
- 1 crushed clove of garlic;
Method
Add all ingredients in a blender and process to a smooth purée. You can thin it with a little water if necessary.
