Creamed spinach is a great way to add more iron to your diet, serve with steak or chicken breast. It is also great served with brunch alongside crusty bread and fried eggs.
Feel free to saute a tablespoon or two of minced shallots before adding the flour, or add some sauteed mushrooms or bacon rashers to the sauce.
Serves 4.
- 500 -700g frozen spinach
- 1/4 cup butter
- 1/4 cup flour
- 1 cup milk
- Salt and pepper
- Dash of nutmeg
Method:
Melt butter in a pot on low direct heat.
Blend in flour until smooth.
Cook until mixture is smooth and bubbly, about 1 to 2 minutes.
Gradually add milk and cook, stirring, until thickened. Add spinach.
Note: The sauce will be quite thick, but the liquid from the spinach will thin it. If, after you add the spinach, the sauce is still very thick, add more milk.
Place the pan over boiling water. Cover and cook, stirring occasionally, 15 minutes.
Season with salt, pepper, and nutmeg, to taste.
