One ingredient caramel. A versatile raw caramel perfect for a variety of dishes. Drizzle over ice cream, use in banoffee pies, add as a sweetener in porridge or make caramel chocolate cups to name a few.
Serves: makes 1 cup
- 20 pitted dates
Method:
Soak the dates in warm water for 10 minutes then drain.
Add pitted dates to a food processor or blender and pulse on low until small bits remain. Add in hot water a tablespoon at a time until a paste is made. You will need to scrape the down sides and encourage it along periodically.
Be sure to only add enough water to form a paste – too much and it will be too liquid, you can always add more water later if needed.
Leave as is, or add a pinch of salt to enhance flavour. Will keep covered in the refrigerator for 1-2 weeks, and often more.
