Tomato, feta & basil crostini

You’re sure to impress with these nibbles to be served casually with drinks.

Elements can be made in advance so that you can appear organised and in control of any dinner party.


Ingredients:

Tip: Crostini can be bought at the supermarket or you can make your own by slicing French bread, brushing both sides with olive oil and baking in a moderate oven until crunchy. Cool and store in airtight containers until use.

Method
Preheat oven to 220 degrees

Toss cherry tomatoes in a bowl with oil, balsamic vinegar, garlic cloves (leave the skin on, these are just for flavouring) and season with pepper and salt.Transfer to roasting dish and roast in oven for 15 minutes

Remove from oven and cool (Tomatoes can be prepared a day in advance)

Cut feta into square pieces to sit neatly on crostini as thick or thin as desired.Place one piece of feta, then one tomato on each crostini and finish with a small basil leaf.

Garnish with black cracked pepper.
