Baked pumpkin seeds

Don’t throw away the seeds next time you’re cutting into a pumpkin. They are full of good fats, fiber, manganese, iron, zinc and many other nutrients.

Remove the seeds from the pumpkin

Wash and dry them thoroughly, removing the pumpkin strings and “innards”

Toss the seeds with olive oil and seasoning of your choice.

Bake at 160 C for 5-15 minutes, stirring and checking frequently to avoid burning.

Cool, and store in an air-tight container. They will last for several weeks, at least.
