Bacon butter

Bacon makes everything better, try this bacon butter on toast or stirred into your pasta, with fish or chicken dishes as an addition to your quiche anything really.

Ingredients:

  • 120 g butter
  • 2 shallots
  • 60 g bacon
  • 1 tablespoon fresh basil
  • 1 teaspoon tomato paste

Method:

  1. Peel and chop the shallots finely. Cut the bacon into small pieces.
  2. Fry all in 1 tablespoon of butter for about 5 minutes.
  3. Let cool and blend with the rest of the butter, tomato paste and basil.
  4. Salt and pepper.
  5. Form the butter into a roll in parchment paper or store in a small bowl. Put in the fridge for about half an hour to make it more solid.
