“Tina Duncan is without a doubt one of our country’s ‘Culinary Gems’. In Plated, Tina shares her wealth of knowledge (and her extraordinary life story), creating a gorgeous cookbook full of delicious, uncomplicated recipes and tips on how to entertain like a pro. If you’ve been fortunate to have experienced Tina’s talent, you will know what I am talking about, if not, here’s your chance to own ‘the caterer’s bible’. It’s a cracker!” – Al Brown

“While Tina’s recipes cover a huge variety of dishes, ideas, tips and tricks, I love that Tina shares how to make brawn as clearly as how to make a semifreddo without an ice-cream machine … Every time I’ve had the delight of meeting up with Tina I’ve learnt something important from her.” – Maggie Beer

TINA DUNCAN

Born and bred on a Canterbury farm, Tina’s love for food started literally standing under her mother’s apron strings helping to cook for a family of eight. Cooking full roast dinners by the age of ten and dinner parties shortly thereafter, Tina has always gravitated to the kitchen to fulfil not only her love of food, but also to share her love for others. This book shares her greatest kitchen poetry, the recipes she has used to raise her own family around the table.

Tina travelled to the UK in the early 1970s with her sister, Paula, where she met fellow Kiwi Grant Duncan and started a family journey of her own. The 1980s were spent poring through Larousse alongside The Australian Women’s Weekly cookbooks, where dinner parties were the perfect testing ground for new and exciting foods from China to India, and when garlic first entered our kitchens in New Zealand alongside the trendy “avocado pear”.

Tina and Grant enjoyed adventure, and their life took them from motor racing to farming, travelling and catering. When Tina started working for renowned Christchurch chef, the late Michael Lee-Richards, in the 1990s she finally launched herself professionally into a food career. Swapping her house for a catering business over a glass of wine, Tina operated White Tie Catering for fifteen years.

Tina was a founding director of Savour New Zealand, a food masterclass series that brought some of the greatest chefs and food writers in the world to Aotearoa. She then found herself cooking dinner for Antonio Carluccio, Anthony Bourdain, Maggie Beer, Stephanie Alexander and Sophie Grigson, to name just a few.

This book is designed around entertaining, drawing on Tina’s lifetime of experience in cooking for a crowd. Her recipes will help you know how far to take prep in advance, how to heat and hold, to revolutionise your kitchen technique with tinfoil and tea towels, and most importantly, how to enjoy being with your guests rather than stuck in the kitchen.

Tina lives in Christchurch alongside a large family with six grandchildren and still, her favourite thing to do is bring them all together around the table.
